Disney’s Frozen is such a CUTE movie. It is also the the highest-grossing animated film of all time and the sixth highest-grossing film of all time. Not only is it a cute movie, there are so many FUN Frozen party food ideas and crafts for those of you hosting a Disney Frozen themed party. My daughter Hannah has a birthday coming up so I thought I would put together some ideas for our own Frozen party!

Cinco De Mayo Recipe Roundup

When it comes to food, one of my favorites is Mexican food. Every week you will find me making either tacos, burritos or enchiladas for dinner. I love sour cream and guacamole and those two with Mexican food is magical! In celebration of Cinco De Mayo and my love for Mexican food, I thought I would share with you some delicious recipes I am thinking about making on Monday.

When it comes to enchiladas, even though I like both flour and corn, I mostly make them with corn tortillas. How about some enchiladas with chili? Sounds good to me. I definitely want to try these Tex-Mex Cheese Enchiladas.

I often use ground beef but there are days when I enjoy using ground turkey too! For those that prefer to use ground turkey, here is a yummy recipe for Turkey Taco Bites I want to try.

When I am eating out something I like to order is carnitas. It is something I don’t cook often at home but something I like to eat. For those that want to make carnitas just like Chipotle, here is a Chipotle’s Pork Carnitas Copycat Recipe that you can make in your crockpot.

Pillsbury Bake-Off’s Peanut Butter Layer Brownies Recipe #BakeOff

I love to bake sweets and was excited to receive a box full of goodies to make one of the recipes in the Pillsbury Bake-Off 100 Winning Recipes book that was in the box. I chose to make the Peanut Butter Layer Brownies but there are 99 more recipes in this book that look amazing.

Now back to the brownies. I have a copy of the Pillsbury Bake-off 100 Winning recipes and chose to make the Peanut Butter Layer Brownies. It was so hard to choose one recipe so I actually bought ingredients to make a few of them.

These brownies came out delicious. I even brought some of them over to my grandparents for sweet surprise!  Ready for the recipe?

Recipe Type: Dessert

Ingredients
  • 12 tablespoons Crisco Baking Sticks All-Vegetable
  • 1 1/2 cups sugar
  • 4 eggs
  • 2 cups Pillsbury Best All Purpose Bleached Flour
  • 2 cups instant hot cocoa mix
  • 1 can (14oz) Eagle Brand Sweetened Condensed Milk
  • 1 cup Jif Extra Crunchy Peanut Butter
Instructions
  1. Heat oven to 350°F. Spray 13×9-inch pan with Crisco Original No-Stick Cooking Spray.
  2. In large bowl, beat shortening and sugar with electric mixer on medium speed until well mixed. Add eggs; beat until smooth. Add flour and cocoa mix; Beat, scraping bowl occasionally, until blended. Spread half of batter in pan.
  3. In large microwaveable bowl, mix sweetened condensed milk and peanut butter. Microwave on High 1 minute, stirring once or until softened. Carefully spread peanut butter mixture over brownie layer. Spoon and carefully spread remaining half of brownie batter over peanut butter layer.
  4. Bake 35 to 45 minutes or until toothpick inserted 1 inch from edge comes out almost clean. Cool completely, about 2 hours. Store covered.

The recipe does call for extra crunchy peanut butter but I used the creamy kind. I also accidentally grabbed hot cocoa with marshmallows but it worked out just perfect!

Now to get in the kitchen to come up with that 1 million dollar recipe!

 

Pretty Peeps Chicks In A Nest

Peeps Chics In Rice Crispie Nest

I have a bunch of Peeps on hand so I thought I would get creative this week and surprise the kids. While they were visiting their great grandparents for the day, mom was at home making them some pretty Peeps Chics in nests made out of rice crispie treats along with some Whopper Robin Eggs.

These are pretty easy to make. First you are going to make some Rice Krispie Treats. You can find the directions on the back of the marshmallow packages. Basically if you never made them, you just need the cereal, marshmallows and a little butter. I made half a batch since I only wanted to create 8 of them.  Once you got your Rice Krispie Treat mixture made, put equal amounts into a muffin tin.

Once in the muffin tins you will want to let the mixture sit for about 5 minutes. Once cooled, remove from tin and use fingers to create a nest.

Next use some green frosting and make some grass in the nest. I only used a little bit of frosting because once I add the Peeps, they are going to have enough sugar.

Next is the fun part. Add the eggs and add your Peeps Chick.

I like that there are so many colorful peeps that you can make an pretty tray of these pretty Peeps Chicks in their nests.

Easy Angel Food Cupcake Recipe

Angel Food Cupcakes

For those looking to put a little twist on the angel food cake, here is a yummy angel food cupcake recipe that is sure to be a hit with the kids or perfect for that lunch date at the park.

Ingredients:

Directions:

  • Preheat oven to 375 degrees.
  • Line muffin pan with paper liners.
  • Replace water with Sparkling ICE, continue to follow recipe on box as listed.
  • Beat the cake mix and Sparkling ICE on low speed for 30 seconds.
  • Raise the speed to medium and beat for an additional minute. The batter will be pale pink and foamy.
  • Add batter to the liners and fill approximately ¾ full.
  • Bake according to directions on the box, approximately 15-20 minutes, or until tops of muffins are golden brown.

You can serve these cupcakes with fresh strawberries and even whip cream!
