Ingredients:

• 1 box angel food cake mix
• Strawberry Lemonade Sparkling ICE

Directions:

• Preheat oven to 375 degrees.
• Line muffin pan with paper liners.
• Replace water with Sparkling ICE, continue to follow recipe on box as listed.
• Beat the cake mix and Sparkling ICE on low speed for 30 seconds.
• Raise the speed to medium and beat for an additional minute. The batter will be pale pink and foamy.
• Add batter to the liners and fill approximately ¾ full.
• Bake according to directions on the box, approximately 15-20 minutes, or until tops of muffins are golden brown.

You can serve these cupcakes with fresh strawberries and even whip cream!

Making stuffed bell peppers with Manwich makes my job a little easier. While I prefer to make homemade sauces and such, there are nights when I don’t have a couple hours to prepare some homemade sauce.

If you want to make some stuffed bell peppers, here is a quick and easy recipe.

Ingredients:

• 4-6 bell peppers
• 1 cup rice
• 2 cups water
• 1 pound ground beaf (lean)
• 1 can Manwich
• 1 cup shredded cheese

Directions:

1. Cut the top off of each bell pepper, remove insides, wash and set aside.
2. In a pan add 2 cups water and rice. Bring to boil, reduce to simmer and cook about 15 or until all water is absorbed.
3. While rice is cooking, you will make your meat mixture. In a skillet, brown the ground beef and drain fat. Add can of Manwich and cheese, stir and cover. Set aside unti rice is done.
4. Add rice to meat mixture.
5. Fill eat bell pepper with meat mixture, almost to full but do not overfill.
6. Place bell peppers in oven at 350° for 40-45 minutes.
7. Remove from oven and enjoy!

When it comes to foods, I really like bread. There is just so many different things you can do to bread to give it different tastes and texture. I have been wanting to make zucchini bread lately but wanted to give it a little twist.

Yesterday I made Lemon Zucchini Bread. What I didn’t tell my family about the bread was there was zucchini in it. They would automatically stick up their noses. My kids enjoyed the bread, my husband really enjoyed it and two of our friends also said it was really good. There were no leftovers….

I only told our friends about the zucchini that was inside, not the hubby or kids. 🙂

To make this bread a little more healthy, you can always leave out the glaze…
