Now that the weather is starting to get cooler I am finding myself in the kitchen more often. I love to bake but also like being able find quick meals to prepare for my kids who seem to always come home from school hungry! One of my favorite things to make that is quick and easy is dips because you can really get creative on what you add for the dipping and even what you dip with!
I love to cook and I almost always have a variety of S&W Beans in my pantry that I can grab because better meals start with a better bean. Most of the time I use the S&W Beans to make chili but I recently got creative and made a skillet chicken and bean dip my whole family enjoyed! You can make this dip a meal or it can be the perfect after school snack for those of you like me that have kids that come home wanting a meal before dinner.

I used some of the S&W White Beans and a handful of other ingredients I had in the fridge to make a delicious Skillet White Bean, Chicken & Cheese Dip that was a hit, even with the kids! My family likes foods that are spicy so I added the green salsa to this dip to give it some flavor! You could also add your own personal touch like adding corn, tomatoes, olives or whatever else you think goes well with beans, chicken and cheese. Skillet White Bean, Chicken & Cheese Dip With S&W Beans
- 1 1/2 cans S&W White Beans drained
- 8 oz sour cream
- 2 cups shredded cheese
- 1 cup cooked chicken shredded or cubed
- 1 cup salsa verde
- 1/4 chopped green onion
In a blender or food processor add 1 can of S&W White Beans. Add sour cream and 1/2 cup of salsa verde. Blend until smooth.
Pour mixture into cast iron skillet. Add chicken and 1 1/2 cups of cheese and stir to mix.
Add 1/2 can of S&W White Beans to top of mixture. Drizzle remaining salsa verde on top of mixture. Sprinkle with remaining cheese. Top with green onions.
Bake at 375° for 15-17 minutes or until cheese is melted on top and golden.
Remove from oven. Allow dip to cool for a few minutes before serving.
