Oven Baked Tortilla Española Recipe

Ingredients

  • 1/4 pound thin sliced salami
  • 2 large potatoes diced
  • 8 eggs
  • 1 cup onion diced
  • 1/4 cup parsley chopped
  • 1 tablespoon vegetable oil
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Cook the salami in a skillet over medium-high heat until it begins to brown. Remove salami from skillet and set aside.
  2. Add potatoes, onion, vegetable oil, salt and pepper. Cook in the skillet about 10 minutes until potatoes are tender and golden. Add the salami and parsley to skillet.
  3. In a bowl whisk together eggs and cheese. Pour eggs into skillet and stir to distribute the ingredients.
  4. Put skillet in oven and bake at 400° for 10 minutes or until tortilla is puffed and brown around the edges. Use a knife to check to make sure the inside comes out clean when inserted in center.
