Pork Sliders With Pineapple Salsa

Ingredients

  • 1 Smithfield Roasted Garlic & Herb Pork Loin Filet
  • Slider rolls
  • Lettuce leaf
  • 1 cup pineapple bits drained
  • 1/2 cup red onion chopped
  • 3/4 cup cilantro chopped
  • 2 limes

Instructions

  1. Add the pork loin filet to pressure cooker and cook for 20-30 minutes depending on your preference on how well you like your pork cooked.
  2. While the pork loin filet is cooking make your pineapple salsa. In a bowl add the pineapple bits, red onion and cilantro. Slice both limes in half and squeeze juice into bowl. Stir until well blended. Cover and put in fridge until pork is ready.
  3. Once pork loin filet is ready remove from pressure cooker and slice it into 1" to 2" slices.
  4. To make sliders add a slice of lettuce on bottom bun. Next add a slice of pork and top with pineapple salsa. Add top bun to make a pork slider.
