Italian No-Meatball Sliders

  • 1 lb House Foods Premium or Organic Tofu Extra Firm (drained and cut into large cubes)
  • 1/2 cup ricotta cheese
  • 4 garlic cloves
  • 1 egg
  • 1/2 cup parmesan cheese
  • 1 cup Italian breadcrumbs (plus extra for rolling)
  • Salt and pepper to taste
  • 2 cups tomato sauce (warmed)
  • 8 slider buns
  • Mozzarella cheese (sliced into 8 slices)
  1. Preheat oven to 350F. Add tofu and garlic to the bowl of a food processor and grind until well combined.
  2. Place tofu mixture into a bowl and mix with the ricotta, egg, parmesan and slowly add breadcrumbs until a workable consistency forms. Mix well and add salt and pepper. Form balls, making sure they hold together well, and roll in the remaining breadcrumbs.
  3. Add the balls to a greased baking sheet. Bake for 35 min., until firm, turning once halfway through. Place a tofu ball on the bottom half of each slider bun, top with tomato sauce, mozzarella cheese and the top half of the slider bun.
  4. Makes 8 sliders
